Sorry if this sounds like a real lame question but I've only just strted digging into the use of this product.

Looking at the SFTP transfer process and it's all good so far with one exception.

How do you select individual files, with differing file extensions, from a folder containing multiple file types and only a few of which you wish to transfer eg you don't want all the .txt files but maybe 3 out of 5 of them, plus 2 out of 5 .dat files etc etc

You can't right now. You need to create for example 2 FTP download commands. One with filter *.txt and one with *.exe for example.

Yes, it should be possible to implement pretty soon. I am moving this to the Feature requests forum.
