You can setup time exceptions like Christmas or other special days.
When you select a time exception group on your job, the job will NOT run on the days in the time exception group.

Ok, I get that, but what I need is more complicated. Like, not from 11PM to 5AM and not on weekens. So, that's what I did, I set up a collection called After Hours and made added an Excepton of Saturday and Sunday (every year, every month, every minute, every second) and one of every year, every month, every day, BETWEEN 11PM and 5AM, every minute, every second.

That works, right?

I think that is the way it works yes.
