Generally for each Job I have it'll do a task then i have the task of sending an e-mail as the final one. Most of my jobs are triggered via e-mail trigger.

Is there any way to set up the final task e-mail to send to the person who triggered the job?

Yes,

there is a Variable for From Address of the Trigger:

{TRIGGER(Active|LastTrigger|Mail.Result.Mail.FromAddress)}

Please remember to set "Put Job in queue" option on the Job.
